Herb and Cheese Puffs

  1. Place flour and salt in a bowl.
  2. Make a well in the centre.
  3. Whisk egg and milk together in a jug.
  4. Add to flour mixture.
  5. Whisk until smooth.
  6. Pour mixture into a large jug.
  7. Cover and set aside for 30 minutes to rest.
  8. Stir in cheese and parsley.
  9. Meanwhile, preheat oven to 220C/200C fan-forced.
  10. Divide oil between holes of a 12-hole, 1/3 cup-capacity muffin pan.
  11. Place pan in oven for 5 to 7 minutes or until oil is just smoking.
  12. Carefully pour mixture into holes until half full.
  13. Bake for 15 to 20 minutes or until puffed and golden.
  14. Transfer to a plate.
  15. Serve.
