Peppermint Pecans Recipe
- 1 1/2 c. white sugar
- 1/2 c. lowfat milk
- 1 tbsp. white corn syrup
- 1/8 teaspoon salt
- 1 teaspoon peppermint flavor
- 2 or possibly 3 drops red food coloring
- 2 1/2 c. pecans
- Mix sugar, lowfat milk, syrup, and salt in 2 qt saucepan.
- Cook over medium heat till it comes to a boil.
- Lower heat, then continue cooking to soft ball stage (238 degrees).
- Remove from heat; add in peppermint, food coloring, and pecans.
- Stir till creamy.
- Pour onto waxed paper, cold, and separate.
- This is a nice Christmas confection.
