Crockpot Roasted Red Pepper Pork Chops
- 2 pounds Bone-in Pork Chops
- 16 ounces, fluid Jarred Roasted Red Peppers, Drained
- 15 ounces, fluid Canned Diced Tomatoes, Drained
- 1/2 cups Onion, Chopped
- 1 teaspoon Chili Powder
- 1 teaspoon Oregano
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- Hot Cooked Rice, For Serving
- 1.
- Lay chops in the bottom of your crock (a 5-quart size crock works great).
- 2.
- In a bowl, combine peppers, tomatoes, onion, chili powder, oregano, salt and pepper.
- Stir well.
- 3.
- Pour mixture over chops.
- 4.
- Cover and cook on low for 8 hours.
- 5.
- Serve mixture over hot, cooked rice.
