Grilled Hawaiian Chicken Sandwich
- 2 whole Boneless Chicken Breasts
- 2 slices Pineapple, Cored
- 1/2 cups Spring Mix
- 2 slices Red Onion
- 2 whole Sandwich Buns
- 1 Tablespoon Vegetable Oil
- 1 clove Garlic, Minced
- 1/4 cups Soy Sauce
- 3 Tablespoons Water
- 1/2 Tablespoons Honey
- 1/2 Tablespoons Light Brown Sugar
- 1 teaspoon Ginger, Minced
- 1 teaspoon Cornstarch
- 1 Tablespoon Water
- For the sandwiches: Add chicken and pineapple to a preheated grill over medium heat.
- Grill pineapple for about 2 minutes on each side or until it has nice grill marks.
- Take it off of the grill and set aside.
- Grill chicken until fully cooked, about 4-6 minutes per side or until juices run clear.
- Take it off of the grill and set aside.
- To assemble the sandwich layer lettuce, red onion, chicken and sliced pineapple onto each bun.
- Drizzle with homemade teriyaki sauce and serve immediately.
- For the teriyaki sauce: Add oil and garlic into a medium saucepan.
- Cook for 1 minute.
- Add in soy sauce, water, honey, brown sugar and ginger.
- Bring to a simmer and cook for 2 minutes.
- In a small bowl mix together the cornstarch and water until combined.
- Slowly add this to the teriyaki sauce and whisk until the sauce has thickened.
- The sauce should be thick enough to coat the back of the spoon.
