Fajitas
- 1 1/2 lb. boneless sirloin steak (about 1 1/2-inches thick)
- 1/4 c. vegetable oil
- 1/4 c. red wine vinegar
- 1 tsp. sugar
- 1 tsp. oregano
- 1 tsp. chili powder
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 12 (10-inch) flour tortillas
- 2 Tbsp. vegetable oil
- 2 onions, sliced
- 2 green peppers, sliced
- picante sauce
- Cheddar cheese
- Trim excess fat from beef steak.
- Prick beef with fork in several places.
- Mix 1/4 cup oil, the vinegar, sugar, oregano, chili powder, garlic powder, salt and pepper in ungreased square baking dish (8 x 8 x 2-inches).
- Place beef in dish, turning once, to coat both sides.
- Cover and refrigerate at least 8 hours, turning meat occasionally.
- Broil beef with top about 3 inches from heat about 8 minutes or until brown.
- Turn.
- Brush beef with marinade.
- Broil until done.
- Saute onions and peppers in oil. Cut beef diagonally into very thin slices.
