Seafood Gumbo
- 6 Tbsp. flour
- 6 cloves garlic, chopped
- 1/2 c. chopped bell pepper
- 3 lb. peeled, raw shrimp
- 3 qt. water
- 1/4 bunch fresh parsley, chopped
- 3 bay leaves
- 2 doz. oysters
- 1/2 c. olive oil
- 1 c. onion, chopped
- 3/4 c. celery, chopped
- 1 (16 oz.) can tomato paste
- 1 lb. crabmeat
- 1/2 tsp. thyme
- 1 can or pkg. frozen okra
- 1 c. oyster liquid
- salt and pepper to taste
- Make a roux with olive oil and flour.
- Cook garlic until light brown.
- Add onion, bell pepper and celery.
- Saute 15 minutes, stirring frequently.
- Add shrimp, tomato paste and water.
- Mix well.
- Add all ingredients except okra and oysters.
- Cook 1 1/2 hours.
- Add okra and cook 15 minutes.
- Add oysters, cook another 15 minutes.
- Serve over rice.
- Serves 8.
