Individual Peach and Amaretti

  1. Preheat the oven to 350F (180C) and place oven rack in centre position.
  2. In a mediumsized bowl, mix cookie crumbs, melted butter, brown sugar and flour.
  3. Divide crumb mixture evenly among 8 ramekins, about 2 tbsp (30 mL) each, pressing into bottoms.
  4. Place ramekins on a baking sheet and bake for 8 minutes.
  5. Remove from oven and let cool.
  6. Lower the oven to 325F (160C).
  7. With a mixer or a wooden spoon, combine the cream cheese and mascarpone.
  8. Add sugar, beat in eggs one at a time and mix until smooth.
  9. Add the crushed peaches to the cheese mixture and stir to combine.
  10. Divide mixture evenly among each ramekin spooning cream cheese filling on top of cooled crusts.
  11. Garnish with peaches and sugar!
