The Bricks Pancakes
- 4 c. buttermilk
- 4 c. old-fashioned oats
- 4 eggs
- 1/2 c. melted butter
- 1 c. flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 2 tsp. sugar
- 1/2 tsp. cinnamon or more to taste
- 1/2 tsp. salt (optional)
- Combine oats and buttermilk and refrigerate overnight.
- Add slightly beaten eggs and melted butter to mixture.
- In a medium bowl, combine flour, soda, baking powder, sugar, cinnamon and salt. Add buttermilk mixture, stirring enough to barely moisten dry ingredients.
- For each pancake, drop 1/2 cup batter onto lightly greased griddle.
- Cook until surface is bubbly and edges are slightly dry, then turn and cook other side.
- This recipe makes about 26 pancakes.
- Reduce ingredients by half for smaller family.
