King Ranch Chicken
- 1 large fryer, stewed, boned and cut into bite size pieces
- 1 large onion, chopped
- 1 large green pepper, chopped
- 1/2 c. chicken stock
- 1/2 lb. Cheddar cheese, grated
- 1 1/2 tsp. chili powder
- garlic to taste
- 1 (10 1/2 oz.) cream of chicken soup
- 1 (10 1/2 oz.) cream of mushroom soup
- 1/2 c. picante sauce or 1 small can Ro-Tel tomatoes, crushed
- 1 pkg. tortilla chips
- Combine chicken, onion and green peppers.
- Layer tortilla chips, chicken mixture and cheese.
- Mix chili powder, garlic, soups, picante sauce and chicken stock together.
- Pour over layers.
- Top with grated cheese.
- Bake at 350u0b0 for 30 to 45 minutes.
- Serves 8 to 10.
