Grilled Vegetable and Prosciutto Caesar Sandwich

  1. Combine vegetables; season with pepper.
  2. Cover to keep warm.
  3. For each serving: Grill 1 baguette, cut-sides down, until golden brown.
  4. Spread cut sides of baguette with 1 Tbsp.
  5. (15 mL) of the dressing.
  6. Toss 1/2 cup (125 mL) of the lettuce with 2 tsp.
  7. (10 mL) of the remaining dressing.
  8. Spoon 6-1/2 oz.
  9. (185 g) of the vegetable mixture onto bottom half of baguette; top with lettuce mixture and 1 oz.
  10. (30 g) prosciutto.
  11. Cut 2 cheese slices diagonally in half; place over prosciutto.
  12. Cover with top of baguette.
