Grilled Vegetable and Prosciutto Caesar Sandwich
- 3 qt. grilled zucchini halves, cut 1/2-inch-thick slices
- 2 qt. grilled eggplant halves, cut into 1/2-inch-thick slices Safeway 1 ea For $1.28 thru 02/09
- 1-1/2 qt. grilled red onion slices (1/2 inch thick), separated into rings
- 1 Tbsp. coarsely ground black pepper
- 24 each herb-flavoured demi baguettes, split
- 2 1/2 cups Kraft Creamy Caesar Dressing, divided
- 3 qt. spring lettuce mix
- - prosciutto, thinly sliced
- 48 slices Casino Mozzarella Slices
- Combine vegetables; season with pepper.
- Cover to keep warm.
- For each serving: Grill 1 baguette, cut-sides down, until golden brown.
- Spread cut sides of baguette with 1 Tbsp.
- (15 mL) of the dressing.
- Toss 1/2 cup (125 mL) of the lettuce with 2 tsp.
- (10 mL) of the remaining dressing.
- Spoon 6-1/2 oz.
- (185 g) of the vegetable mixture onto bottom half of baguette; top with lettuce mixture and 1 oz.
- (30 g) prosciutto.
- Cut 2 cheese slices diagonally in half; place over prosciutto.
- Cover with top of baguette.
