Golden Turkey Quiche
- 1 frozen deep dish pie shell
- 1 c. chopped celery
- 1 Tbsp. butter or margarine
- 1 c. turkey or chicken, cooked and diced
- 2 Tbsp. chopped pimento
- 3 eggs
- 1 c. milk
- 1/4 c. mayonnaise
- 1 Tbsp. mustard
- 1/2 tsp. salt
- 1 c. shredded Cheddar cheese or Monterey Jack
- paprika
- Bake pie shell at 375u0b0 for 10 minutes.
- Cook celery in butter until tender.
- Stir in turkey and pimento.
- Beat together eggs, milk, mayonnaise, mustard and salt.
- Stir egg mixture into turkey mixture.
- Pour into pie shell.
- Sprinkle with cheese and paprika. Bake at 375u0b0 for 25 to 30 minutes until knife inserted near center, comes out clean.
- Good way to use leftover turkey or chicken.
