Cranberry and Apricot compote *ari*Sig
- 250 grams dried apricots
- 250 grams fresh or frozen cranberries
- 1 zest of lemon to decorate
- place apricots in saucepan just cover with water,bring to boil and simmer for 5minutes.Drain and add fresh cold water, just cover apricots.Return to boil reduce heat and simmer for20 minutes until soft.Add the cranberries return to boil and continue cooking for about 8 minutes until the cranberries have burst.
- Pour into serving dish with just enough liquid to cover.
- Decorate with lemon zest.
- Leave to stand for a while, serve hot or cold.
