Gator Puppies
- 1 lb. ground gator meat
- 1 pkg. dry vegetable soup/dip mix
- 3 c. complete pancake mix
- 3/4 c. cornmeal
- 1 large egg
- 8 oz. shredded Monterey Jack cheese
- 1 1/4 c. water
- 1 Tbsp. margarine
- 1 tsp. pepper
- Mix together the dry ingredients; add water, egg and cheese. Saute the ground gator in 1 tablespoon of margarine until the meat just turns white.
- Drain and then add to mixture.
- Stir by hand until all ingredients are distributed evenly.
- Drop 1/2 teaspoon of mix into 375u0b0 oil and deep-fry until golden brown, turning once.
- Drain on paper towels.
- Serve with prepared honey-mustard dressing.
- Makes approximately 250 (1 1/2-inch), in diameter.
- Can substitute crab or fish.
