Crunchy Molded Salad

  1. In bowl, combine gelatin, salt and boiling water; stir until gelatin is dissolved.
  2. Stir in the cold water, white pepper and the lime juice.
  3. Chill until mixture is slightly thickened.
  4. Fold cabbage, celery and yellow pepper into gelatin mixture.
  5. Pour into each of 4 (3/4-cup) molds, dividing evenly.
  6. Chill until firm for 3 hours or overnight.
  7. Makes 4 servings.
  8. Each serving contains 80 calories, 2.2 g protein, 19.4 carbohydrates, 0.1 g fat, 0 cholesterol and 336 mg sodium.
