Crunchy Molded Salad
- 1 (3 oz.) Pkg. lime flavored gelatin
- 1/2 tsp. salt
- 1/2 c. cold water
- 1 c. boiling water
- 1/8 tsp. ground white pepper
- 2 Tbsp. fresh lime juice
- 1/2 c. finely chopped green cabbage
- 1/2 c. diced celery
- 1/2 c. diced yellow pepper
- In bowl, combine gelatin, salt and boiling water; stir until gelatin is dissolved.
- Stir in the cold water, white pepper and the lime juice.
- Chill until mixture is slightly thickened.
- Fold cabbage, celery and yellow pepper into gelatin mixture.
- Pour into each of 4 (3/4-cup) molds, dividing evenly.
- Chill until firm for 3 hours or overnight.
- Makes 4 servings.
- Each serving contains 80 calories, 2.2 g protein, 19.4 carbohydrates, 0.1 g fat, 0 cholesterol and 336 mg sodium.
