Spinach and Turkey Lasagna

  1. In a saucepan, melt butter.
  2. Stir in flour, salt, and pepper until smooth.
  3. Gradually stir in milk.
  4. Bring to a boil; cook and stir for 1-2 minutes or until thickened.
  5. Stir in cream cheese until melted.
  6. Stir in Parmesan cheese just until melted.
  7. Remove from the heat; set aside.
  8. In a large nonstick skillet coated with nonstick cooking spray, cook sausage, onion and garlic over medium heat until sausage is no longer pink; drain.
  9. Stir in oregano, marjoram and fennel; cook for 1 minute.
  10. Add roasted peppers and wine or broth.
  11. Bring to a boil.
  12. Reduce heat; simmer, uncovered, for 3-5 minutes or until liquid is reduced to 3 tablespoons.
  13. Remove from the heat; set aside.
  14. In a small bowl, combine spinach, cottage cheese and nutmeg; set aside.
  15. Spread 1/2 cup reserved cheese sauce in a 13"x9"x2" baking dish coated with nonstick cooking spray.
  16. Top with three noodles, half of the sausage mixture, half of the spinach mixture and 1 cup sauce; repeat layers.
  17. Top with remaining noodles and sauce.
  18. Sprinkle with mozzarella cheese.
  19. Cover and bake at 375 for 40 minutes.
  20. Uncover; bake 15-20 minutes longer or until heated through and top is lightly browned.
  21. Let stand for 10 minutes before cutting.
