Liz's Layered Dip
- 1 can fat-free refried beans
- 2 cups salsa
- 1-1/2 cup sour cream, room temperature
- 4 plum tomatoes, chopped
- 1 lg. tomato, chopped **
- 1 red onion, minced
- 1 can extra lg. olives, sliced
- 2 cups shredded cheddar
- mozzerella cheese
- 1 avocado, peeled, pitted and chopped (optional)
- 1 can (sm.) corn, well drained (optional)
- Mix salsa and refried beans together.
- Spread mixture into the bottom of serving dish (should be about 1/2-inch, depending on the size of the dish).
- Spread sour cream on top of the salsa and refried bean mixture with a large spoon.
- Mix tomatoes, red onion, and olives together; spread mixture on top of the sour cream.
- Finish off by spreading cheese on top.
- You can also add chopped avacado, and or a small can of corn to the tomato, olive and red onion mixture.
- Serve with scoop corn chips.
- Enjoy!
