Applesauce-Raisin Cookies
- 1/2 c. vegetable oil
- 1/4 c. sugar
- 1 egg
- 1 tsp. vanilla
- 1/2 c. unsweetened applesauce
- 1/2 c. whole wheat flour
- 1/2 c. unbleached white flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/8 tsp. ground cloves
- 1/2 c. oatmeal
- 1/2 c. raisins
- Cream the oil and sugar together.
- Add the egg; beat until light.
- Blend in the vanilla and applesauce.
- Stir the two flours, baking powder, baking soda, cinnamon, cloves, oatmeal and raisins into the creamed mixture.
- Blend well.
- Drop by teaspoonfuls onto lightly oiled baking sheets.
- Bake at 375u0b0 for 10 minutes.
- Cool on a wire rack.
- Yields 24 cookies.
