Eggs Florentine

  1. Heat butter in skillet.
  2. Add onions and cook until tender.
  3. Add spinach and toss until mixed.
  4. Place in a baking dish.
  5. Slip eggs into hollows made in mixture.
  6. Cover with mornay sauce and bake at 350F (180C) for 10 minutes or until eggs are set.
