Quinoa chili
- 1 can Black beans
- 1/2 cup cilantro
- 1/2 tsp ground coriander
- 1 1/2 cup fresh or frozen corn
- 4 clove garlic
- 4 each Red chiles
- 1 small juice of lime
- 1 can tomatoes paste
- 2 large tomatoes
- 1/2 tsp Cayenne pepper
- 2 1/2 tsp Chili powder
- 1 1/2 tsp paprika
- 1/2 tsp ground coriander
- 1/2 tsp freshly ground black pepper
- 1/2 tsp freshly ground salt
- 2 tsp cumin
- 1 tbsp extra virgin olive oil
- 1 1/2 cup water
- 2 cup cooked quinoa
- Cook 2 cups of quinoa while you prep the other ingredients.
- Once the quinoa is cooked , place it in a deep sauce pan with the other ingredients.
- Cover pan and cook on medium for 20 min .
- Stir occasionally.
- Reduce heat and cook on low for 10 min.
- Enjoy with some toasted naan bread or your favorite rice.
