Chocolate Sandwich Cookies

  1. In large bowl, cream together 2/3 cup margarine, sugar and salt until light and fluffy.
  2. Beat in egg, then 1 teaspoon vanilla. Blend in flour, one cup at a time.
  3. Cover and chill 1 hour. Preheat oven to 375u0b0.
  4. Divide dough in half.
  5. On lightly floured board, roll out each half to 1/8-inch thickness.
  6. With a 2 1/4-inch fluted-edge cookie cutter, cut dough into rounds.
  7. With a 1/2-inch round cutter, cut out centers from half of rounds.
  8. Place on greased cookie sheets.
  9. Bake 8 to 10 minutes or until light brown. Cool on racks.
