Chocolate Sandwich Cookies
- 2/3 c. margarine, softened
- 1 c. sugar
- 1/4 tsp. salt
- 1 egg
- 2 1/2 tsp. vanilla
- 2 3/4 c. all-purpose flour
- 1/4 c. margarine, softened
- 1/4 c. shortening
- 1 c. marshmallow cream
- 1 c. confectioners sugar
- 1/4 c. cocoa
- In large bowl, cream together 2/3 cup margarine, sugar and salt until light and fluffy.
- Beat in egg, then 1 teaspoon vanilla. Blend in flour, one cup at a time.
- Cover and chill 1 hour. Preheat oven to 375u0b0.
- Divide dough in half.
- On lightly floured board, roll out each half to 1/8-inch thickness.
- With a 2 1/4-inch fluted-edge cookie cutter, cut dough into rounds.
- With a 1/2-inch round cutter, cut out centers from half of rounds.
- Place on greased cookie sheets.
- Bake 8 to 10 minutes or until light brown. Cool on racks.
