Bursting Blueberry Muffins

  1. Heat oven to 375 degrees F.
  2. Mix together blueberries and 2 Tbsp.
  3. flour in small bowl.
  4. Mix remaining flour, baking powder and salt in medium bowl.
  5. Beat butter and 3/4 cup sugar with mixer until blended.
  6. Mix in milk, eggs and zest; stir until blended.
  7. Add to dry ingredients, mix until just combine.
  8. Gently fold in berry mixture.
  9. Spoon batter evenly into 12 lined muffin cups.
  10. Sprinkle with remaining sugar.
  11. Bake 20 to 25 min.
  12. or until toothpick inserted in centres comes out clean.
  13. Cool muffins in pan 5 min; remove to wire rack.
  14. Cool completely.
  15. Store in an airtight container up to 2 days.
