Bursting Blueberry Muffins
- 2 cups blueberries Whole Foods 3 For $10.00 thru 02/09
- 2 cups flour, divided
- 2 tsp. Magic Baking Powder
- 1/4 tsp. salt
- 1/2 cup butter, softened
- 3/4 cup plus 1 Tbsp. sugar, divided
- 1/2 cup milk
- 2 eggs
- 1 Tbsp. lemon zest Safeway 4 ct For $5.00 thru 02/09
- Heat oven to 375 degrees F.
- Mix together blueberries and 2 Tbsp.
- flour in small bowl.
- Mix remaining flour, baking powder and salt in medium bowl.
- Beat butter and 3/4 cup sugar with mixer until blended.
- Mix in milk, eggs and zest; stir until blended.
- Add to dry ingredients, mix until just combine.
- Gently fold in berry mixture.
- Spoon batter evenly into 12 lined muffin cups.
- Sprinkle with remaining sugar.
- Bake 20 to 25 min.
- or until toothpick inserted in centres comes out clean.
- Cool muffins in pan 5 min; remove to wire rack.
- Cool completely.
- Store in an airtight container up to 2 days.
