Chicken and Chickpeas Tagine

  1. Dice chicken into bite-sized pieces and sautee until lightly browned over med high heat.
  2. Add onion and sautee until translucent, add garlic, ginger and spices and saute for a couple more minutes.
  3. Add olives, potatoes, lemon juice chicken broth and chickpeas.
  4. Reduce heat to low and simmer 45 minutes or until potatoes are tender.
  5. Serve over couscous.
