Red Pepper Coulis

  1. Heat the oil in a large skillet over medium heat.
  2. Add the sweet red pepper and garlic and saute for 15 minutes.
  3. Stir in the vinegar and sugar.
  4. Add the red pepper flakes, salt and pepper to taste.
  5. Cook, uncovered, stirring occasionally over medium heat for 15 minutes more.
  6. Stir in the tomatoes and basil.
  7. Simmer 10 minutes.
  8. Serve hot with grilled sirloin or flank steak.
