Sausage, Spinach and Cheese Stuffed Peppers
- 1 each orange, red and yellow pepper
- 1 lb. (450 g) Italian sausage
- 1/2 cup finely chopped onions
- 2 cloves garlic, minced
- 1 pkg. (300 g) frozen chopped spinach, thawed, squeezed dry
- 2 Tbsp. Kraft 100% Parmesan Grated Cheese
- 3/4 cup Cracker Barrel Shredded Mozzarella Cheese
- 2 Tbsp. water
- Heat oven to 400 degrees F.
- Cut peppers lengthwise in half; remove and discard ribs and seeds.
- Place peppers, cut sides up, in 13x9-inch baking dish.
- Remove casings from sausage, if necessary; crumble sausage into large skillet.
- Add onions and garlic; cook on medium heat until sausage is evenly browned, stirring frequently.
- Add spinach; cook and stir 2 min.
- or until heated through.
- Remove from heat.
- Stir in Parmesan.
- Spoon sausage mixture into pepper halves; top with mozzarella.
- Add water to baking dish; cover.
- Bake 40 to 45 min.
- or until peppers are crisp-tender and filling is heated through, uncovering for the last 10 min.
