Sausage, Spinach and Cheese Stuffed Peppers

  1. Heat oven to 400 degrees F.
  2. Cut peppers lengthwise in half; remove and discard ribs and seeds.
  3. Place peppers, cut sides up, in 13x9-inch baking dish.
  4. Remove casings from sausage, if necessary; crumble sausage into large skillet.
  5. Add onions and garlic; cook on medium heat until sausage is evenly browned, stirring frequently.
  6. Add spinach; cook and stir 2 min.
  7. or until heated through.
  8. Remove from heat.
  9. Stir in Parmesan.
  10. Spoon sausage mixture into pepper halves; top with mozzarella.
  11. Add water to baking dish; cover.
  12. Bake 40 to 45 min.
  13. or until peppers are crisp-tender and filling is heated through, uncovering for the last 10 min.
