Orange Mango Banana Muffins
- 2 1/4 cup all purpose flour
- 1/3 cup granulated sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 1 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1/3 cup semi pureed banana
- 1 cup diced, ripe fresh mango
- 1 1/2 tbsp orange zest
- 4 tbsp colored sugar (more or less as needed)
- 1 tsp grated orange peel
- Preheat oven to 374F
- Spray or line 18 regular sized muffin cups.
- In a medium bowl wisk together buttermilk, egg,banana and orange zest.
- In another bowl wisk together flour, sugar, baking powder, baking soda and salt.
- Pour wet into dry and mix until just incorporated.
- Do not overmix.
- Fold in mango.
- Pour batter into muffin cups until almost full.
- Sprinkle sugar on top.
- Bake 18-20 minutes or until toothpick comes out clean.
- As soon as you remove the muffins add a few grates of orange peel.
- Let stand 2 minutes then transfer to wire rack for cooling.
- Serve and enjoy!
- Makes 18 regular sized muffins.
