Peas and Pesto Salad

  1. Bake pine nuts at 350 for 5 to 10 minutes or until golden.
  2. Allow to cool.
  3. Blanch peas in boiling water for 1 to 2 minutes and then rinse under cold water.
  4. Combine spinach, peas, pine nuts and pesto.
  5. Great served cold or hot.
