Peas and Pesto Salad
- 4 cups fresh spinach
- 2 cups peas, blanched
- 1 cup roasted pine nuts
- 12 cup pesto sauce (or to taste)
- Bake pine nuts at 350 for 5 to 10 minutes or until golden.
- Allow to cool.
- Blanch peas in boiling water for 1 to 2 minutes and then rinse under cold water.
- Combine spinach, peas, pine nuts and pesto.
- Great served cold or hot.
