Old-Fashioned Stew For Two
- 1/4 lb. beef round steak, cut into 3/4-inch cubes
- 1 large (8 oz.) potato, cut into 3/4-inch cubes
- 1 carrot, cut into 3/4-inch pieces
- 1 rib celery, sliced diagonally into 3/4-inch pieces
- 1/2 c. coarsely chopped onion
- 3/4 c. water
- 1 tsp. browning sauce (such as Kitchen Bouquet)
- 1 1/2 Tbsp. flour
- salt and pepper to taste
- 1 bay leaf
- Place meat cubes in bottom of 1 1/2-quart casserole.
- Add potato, carrot, celery and onion.
- Combine water, browning sauce, flour, salt and pepper.
- Pour over ingredients in casserole.
- Tuck bay leaf into liquid.
- Cover with lid or vented plastic wrap, stirring midway through cooking.
- Microwave on High 5 minutes. Microwave on Medium-low (30%) 25 to 30 minutes . Stir and let set 5 minutes.
- Remove bay leaf.
- Makes 2 servings.
- Recipe may be doubled.
- Use 3-quart casserole.
- Double ingredients.
