Zucchini Banana Bread
- 2 extra large ripe bananas, peeled
- 1 c. all-purpose flour
- 3/4 c. whole wheat flour
- 1/2 c. regular wheat germ
- 1/4 c. toasted sesame seed
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 3/4 c. brown sugar, packed
- 1/4 c. softened butter
- 1 egg
- 1 tsp. vanilla
- 2 1/2 c. shredded zucchini
- 1 c. raisins
- Slice bananas into blender.
- Whirl until pureed.
- Combine flours, wheat germ, sesame seed, baking powder, baking soda and salt.
- Cream sugar and butter until light and fluffy.
- Beat in egg and vanilla.
- Beat in bananas until smooth.
- Add flour mixture until well blended.
- Stir in zucchini and add raisins.
- Turn into well-greased 9 x 5-inch loaf pan.
- Bake in preheated 350u0b0 oven 55 to 60 minutes or until tester comes out clean.
- Cool in pan 10 minutes.
- Remove to wire rack to complete cooling.
- Yields 1 loaf.
