Date-Nut Refrigerator Bran Muffins
- 2 c. boiling water
- 6 c. Shredded Wheat bran cereal
- 2 1/2 c. sugar
- 9 oz. salad oil
- 4 eggs, beaten
- 4 c. buttermilk
- 5 c. flour
- 5 tsp. baking soda
- 1 tsp. salt
- 2 c. chopped nuts
- 2 c. chopped dates
- In medium bowl, pour water over 2 cups cereal; allow mixture to cool.
- In a large bowl, blend sugar, oil, eggs and buttermilk; stir in dry and soaked cereal.
- Add in dry ingredients, then dates and nuts.
- Batter can be baked immediately or refrigerated in a tightly covered container up to 1 month.
- Use paper muffin cup liners. Spoon batter into muffin cup; allow to stand in pans while the oven heats.
- Bake at 375u0b0 for 40 minutes.
- Makes about 60 muffins.
