Date-Nut Refrigerator Bran Muffins

  1. In medium bowl, pour water over 2 cups cereal; allow mixture to cool.
  2. In a large bowl, blend sugar, oil, eggs and buttermilk; stir in dry and soaked cereal.
  3. Add in dry ingredients, then dates and nuts.
  4. Batter can be baked immediately or refrigerated in a tightly covered container up to 1 month.
  5. Use paper muffin cup liners. Spoon batter into muffin cup; allow to stand in pans while the oven heats.
  6. Bake at 375u0b0 for 40 minutes.
  7. Makes about 60 muffins.
