Pasta with Tomato and Avocado
- Short Pasta (100 Grams Per Person)
- 1 whole Ripe Avocado, Peeled And Cubed
- 2 whole Large, Ripe Tomatoes, Cubed
- 1 pinch Minced Or Powdered Garlic
- Squeeze Lemon Juice
- Extra Virgin Olive Oil
- Salt and Pepper, to taste
- This pasta dish is better if you prepare the tomato/avocado sauce some time before serving and refrigerate it before adding the pasta.
- It needs time to flavor up!
- Easy peasy.
- Mix avocado, tomato, garlic, lemon juice (to add zing and avoid browning) and olive oil, salt and pepper to taste.
- Leave to marinate in the fridge for a while.
- Cook pasta.
- I prefer fusilli, but go with what you like!
- Drain, and mix with the tomato/avocado mixture.
- Serve.
- Its that easy!
