Cranberry Fruit Nut Bread
- 2 c. all-purpose flour
- 1 c. sugar
- 1 1/2 tsp. double acting baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt (optional)
- 2 Tbsp. shortening or margarine
- 3/4 c. orange juice
- 1 Tbsp. grated orange rind
- 1 egg, well beaten
- 1/2 c chopped nuts
- 1 1/2 c. chopped cranberries (fresh or frozen)
- Mix together by hand flour, sugar, baking powder, baking soda and salt.
- Cut in 2 tablespoons shortening or margarine until mixture resembles coarse corn meal.
- Combine orange juice, orange rind and egg.
- Pour all at once into dry ingredients, mixing just enough to dampen.
- Carefully fold in nuts and cranberries.
- Spoon into greased and floured loaf pan (9 x 5 x 3-inch).
- Spread corners and sides slightly higher than center.
- Bake at 350u0b0 for about 1 hour until crust is golden brown.
- Cool 10 minutes. Remove from pan.
- Place on cooling rack, top side up.
