Caribbean Chicken
- 1 broiler-fryer chicken (about 3 lb.), cut into 8 pieces Safeway 1 lb For $1.99 thru 02/09
- 2 Tbsp. adobo seasoning
- 1/2 cup KRAFT Zesty Italian Dressing, divided
- 6 cloves garlic, minced
- 1 medium onion, sliced
- 1/2 cup HEINZ Distilled White Vinegar or lime juice
- 1/2 cup chopped pimento-stuffed green olives
- 1/4 cup capers
- 1 bay leaf
- 4 cups hot cooked rice
- Rub chicken with adobo seasoning; set aside.
- Heat 1/4 cup of the dressing in large skillet on medium-high heat.
- Add chicken; cook 7 to 10 min.
- or until lightly browned, turning occasionally.
- Remove chicken from skillet; cover to keep warm.
- Drain and wipe out skillet with paper towels.
- Add remaining 1/4 cup dressing and all remaining ingredients except chicken and rice to skillet; cook and stir 3 min.
- Reduce heat to medium-low.
- Return chicken to skillet; simmer, covered, 45 min.
- or until chicken is cooked through.
- Spoon over rice to serve.
