Caribbean Chicken

  1. Rub chicken with adobo seasoning; set aside.
  2. Heat 1/4 cup of the dressing in large skillet on medium-high heat.
  3. Add chicken; cook 7 to 10 min.
  4. or until lightly browned, turning occasionally.
  5. Remove chicken from skillet; cover to keep warm.
  6. Drain and wipe out skillet with paper towels.
  7. Add remaining 1/4 cup dressing and all remaining ingredients except chicken and rice to skillet; cook and stir 3 min.
  8. Reduce heat to medium-low.
  9. Return chicken to skillet; simmer, covered, 45 min.
  10. or until chicken is cooked through.
  11. Spoon over rice to serve.
