Lady Meat Balls
- 1/2 c. cooked rice
- 1 lb. ground turkey
- 1/2 c. grated onion
- 1/4 c. chopped fresh parsley
- 1/2 c. grated Parmesan cheese
- 5 Tbsp. extra virgin flavorful olive oil
- 2 egg whites, beaten
- 1/4 c. chopped fresh dill or 2 tsp. dried dill
- 1/4 tsp. black pepper
- 1/2 c. all-purpose flour
- Combine rice, meat, onion, parsley, cheese, 2 tablespoons of the olive oil, egg whites, dill and pepper in a bowl.
- Knead well and form into twenty egg shaped ovals.
- Roll ovals in flour.
- Heat remaining oil over medium heat in a large frying pan.
- Saute ovals for about 5 minutes, until brown on one side.
- Turn carefully and saute other side for 3 minutes or until brown.
- Remove and drain on paper towels.
- Keep in a covered casserole in a warm oven until ready to serve.
- If refrigerating to serve later, reheat in a covered casserole at 325u0b0 for 20 minutes, until warm.
