Impossible Taco Pie
- 1 lb. ground beef
- 1/2 c. chopped onion
- 1 (1 1/2 oz.) envelope taco seasoning
- 1 (4 oz.) can chopped green chiles, drained
- 1 1/4 c. milk
- 3/4 c. Bisquick baking mix
- 3 eggs
- 2 tomatoes, sliced
- 1 c. shredded Monterey Jack or Cheddar cheese
- sour cream
- chopped tomatoes
- shredded lettuce
- Preheat oven to 400u0b0.
- Grease 10-inch pie plate.
- Cook and stir beef and onion over medium heat until beef is brown; drain. Stir in taco seasoning mix.
- Spread in plate; sprinkle with chiles.
- Beat milk, baking mix and eggs until smooth, 15 seconds in blender on high or 1 minute with hand beater.
- Pour into plate. Bake 25 minutes.
- Top with tomatoes; sprinkle with cheese.
- Bake until knife inserted between center and edge comes out clean, 8 to 10 minutes longer.
- Cool 5 minutes.
- Serve with sour cream, chopped tomatoes and shredded lettuce, if desired.
- Serves 6 to 8.
