Meatloaf Stew Recipe
- 2 lbs. grnd round
- 1/2 c. tomato sauce
- 1 small onion, minced finely
- 1/2 c. bread crumbs
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 1 egg
- Preheat oven to 350 degrees.
- Combine all loaf ingredients in a large mixing bowl, using a fork.
- Form loaf in a baking pan large sufficient to hold loaf and vegetables.
- Combine all sauce ingredients in a separate mixing bowl.
- Mix well.
- Place potatoes and carrots around loaf.
- Pour sauce over meatloaf.
- Bake 1 1/2 hrs, basting loaf occasionally with sauce.
