Melon Coupe with Vanilla

  1. Combine 1/2 cup wine and sugar in heavy small saucepan.
  2. Scrape in seeds from vanilla bean; add bean.
  3. Stir over low heat until sugar dissolves.
  4. Remove from heat.
  5. Let steep 30 minutes.
  6. Remove vanilla bean.
  7. Combine fruit in large bowl.
  8. Add remaining 1 cup wine to sugar syrup.
  9. Pour over fruit.
  10. Cover and refrigerate 2 hours.
