Aromatic Eggplant Salad Recipe

  1. Cut eggplant into 1/2 inch cubes.
  2. Sprinkle with salt and drain in a colander for 20 min.
  3. Pat dry with paper towels.
  4. Heat oil in a heavy-based pan and cook onion and eggplant till golden brown.
  5. Reduce heat to low and cook 10-15 min, stirring often.
  6. Add in garlic and tomato; cook 2-3 min.
  7. Place in a serving dish and set aside to cold.
  8. Remove excess oil.
  9. Add in herbs and lemon juice.
  10. Season with salt and pepper.
