Skip-A-Step Lasagna(Serves 8 To 10)
- 1 lb. ground beef
- 1 (15 oz.) jar spaghetti sauce with meat
- 2 slightly beaten eggs
- 1 1/2 c. (12 oz.) creamy cottage cheese
- 1/3 c. grated Parmesan
- 1 tsp. Italian seasoning
- 9 uncooked lasagna noodles
- 1 1/2 c. shredded Mozzarella
- 1/2 c. shredded Swiss cheese
- 1 c. boiling water
- 2 Tbsp. grated Parmesan
- Brown ground beef and drain fat.
- Stir in spaghetti sauce.
- In separate bowl, stir together cottage cheese, eggs, 1/3 cup Parmesan and Italian seasoning.
- In 12 x 7 1/2 x 2-inch baking dish, place 3 noodles.
- Spread 1/3 of the meat/sauce mixture over noodles.
- Top with 1/2 eggs, 1 cup cheese and 1/2 cup shredded Mozzarella and 1/4 Swiss.
- Repeat as many times as possible, ending with the meat/sauce mixture on top.
- Pour boiling water around edge of lasagna.
- Cover tightly with foil.
- Bake at 350u0b0 for 1 hour or until noodles are tender.
- Uncover and sprinkle with remaining cheese.
- Return to oven 3 to 5 minutes or until cheese melts.
- Let stand 10 minutes and serve.
- Serves 8 to 10.
