Old-Fashioned Blackberry Jam Cake
- 1/2 c. butter
- 1 c. brown sugar
- 3 eggs, separated
- 1 tsp. soda
- 1 tsp. nutmeg
- 1/2 tsp. cloves
- 2 c. cake flour, sifted
- 1 c. blackberry jam
- 3 Tbsp. sour milk
- 1/2 c. raisins, chop in flour
- 1/2 tsp. salt
- 1 tsp. cinnamon
- Cream butter; add brown sugar gradually.
- Cream until light and fluffy.
- The hand is best for this job.
- Beat egg yolks and add to mixture.
- Sift together soda, salt, spices and flour. Combine jam and sour milk.
- Add sifted dry ingredients and jam mixture alternately to creamed mixture.
- Beat egg whites stiff and fold in.
- Divide batter between two 8-inch layers.
- Bake at 375u0b0 for about 25 minutes.
- Use caramel icing.
