New Year's Day Chowder
- 2 ounces ham chopped
- 1 cup red onion chopped
- 4 cloves garlic minced
- 1 1/2 teaspoons rosemary leaves crushed
- 32 ounces chicken broth nonfat
- 16 ounces black-eyed peas can, undrained
- 2 1/2 cups red skinned potatoes diced
- 2 cups mixed salad greens Collard, Turnip Or Mustard greens
- 1/4 teaspoon black pepper
- 1/4 cup parsley leaves fresh, chopped
- Spray a 4 qt.
- Dutch oven with pam.
- Heat over Medium heat for 1 minute.
- Add ham, onion, garlic and rosemary.
- Cook until onion is tender, stirring often.
- Add broth, peas, potatoes, green and pepper.
- heat to boiling.
- Reduce heat to Low.
- Cover and cook for 30 minutes or until potatoes and greens are tender, stirring occasionally.
- Stir in parsley.
