Fruitcake with Citrus Whipped Topping
- - yellow cake mix
- 3 Tbsp. CRYSTAL LIGHT Citrus Blend Drink Mix
- 1 gal. prepared DREAM WHIP Whipped Topping
- canned fruit cocktail, well drained
- Prepare and bake cake mix in three half-sheet pans (or one half-sheet pan for trial recipe) as directed on package; cool completely.
- Cut each cake layer horizontally into three even layers.
- Add drink mix to whipped topping; stir gently until well blended.
- Place one cake layer on bottom of each of three 4-inch half-hotel pans (or one 4-inch half-hotel pan for the trial recipe).
- Top each with layers of one fourth of the whipped topping mixture, one half of the fruit cocktail and one third of the remaining whipped topping mixture.
- Cover each with a second cake layer and half of the remaining whipped topping mixture; top with the remaining fruit cocktail and the remaining whipped topping mixture.
- Cover with the remaining cake layers.
- Refrigerate 3 hours or until well chilled.
- Store in refrigerator.
