Quesadillas

  1. sprinkle 1/3 cup cheese over half of each tortilla.
  2. Top with chili peppers, green onions and bacon or sausage.
  3. Fold tortillas in half, pressing gently.
  4. in a 10 inch skillet cook quesadillas, 2 at a time, over medium heat for 2 to 3 minutes or till lightly browned, turned once.
  5. Remove quesadillas from skillet; place on a baking sheet.
  6. Keep warm in a 300 oven.
  7. Repeat with remaining quesadillas.
  8. to serve, cut quesadillas with wedges.
  9. If desired, serve with salsa.
  10. makes 6 appetizer serving.
