Mediterranean Quinoa

  1. In glass jar with tight-fitting lid, combine vinegar, oil, garlic, ground pepper and salt.
  2. Seal and shake well.
  3. In large bowl, combine bell peppers, cucumber, olives, onion and parsley.
  4. Mix well.
  5. Add vinegar mixture and toss to coat.
  6. Add quinoa, stir gently but thoroughly to combine; serve.
