Artichoke Frittata
- 5 whole Artichokes
- 1/2 whole Lemon Juice
- 3 whole Eggs
- 1 teaspoon Salt
- 2 pieces Bread
- 1-78 ounces, weight Parmesan Cheese
- 1/4 cups Parsley
- Eliminate the external leaves from your artichokes and cut the hearts into smallish pieces.
- Put them in a bowl with water and the juice of half a lemon.
- In another bowl beat the eggs with a pinch of salt.
- Soak the bread in a little bit of water.
- Once soft squeeze the bread and break it into small pieces into the eggs.
- Add the Parmesan cheese and parsley, then the artichokes.
- Grease a pan with olive oil and pour in the mixture.
- Bake at 180 C for about 30-40 minutes.
