Artichoke Frittata

  1. Eliminate the external leaves from your artichokes and cut the hearts into smallish pieces.
  2. Put them in a bowl with water and the juice of half a lemon.
  3. In another bowl beat the eggs with a pinch of salt.
  4. Soak the bread in a little bit of water.
  5. Once soft squeeze the bread and break it into small pieces into the eggs.
  6. Add the Parmesan cheese and parsley, then the artichokes.
  7. Grease a pan with olive oil and pour in the mixture.
  8. Bake at 180 C for about 30-40 minutes.
