Baked Pears And Figs With Elder Flower And Almond Custard Recipe

  1. In a bowl, place your grnd almonds and egg yolks and whisk well.
  2. In a saucepan, heat your cream to scalding point and pour over the egg mix.
  3. Whisk well.
  4. Bring a saucepan a third full of water to the boil, and place your mixing bowl over the top.
  5. Keep the water at a simmer and whisk the custard till it thickens.
  6. This could take 10-15 min.
  7. Taste and add in sugar to your taste.
  8. Pour into little ramekins and chill.
  9. Grate over a little nutmeg and serve with the baked figs and pears.
