Grandmother'S Jam Cake
- 1 c. butter
- 2 c. sugar
- 3 eggs
- 1 c. blackberry jam
- 3 c. flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 c. buttermilk
- 1 1/2 c. pecans
- 1 c. raisins
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. allspice
- 1 tsp. ginger
- Cream butter and sugar; add eggs and cream well.
- Blend in jam.
- Sift together the flour, salt and spices.
- Add the soda to the buttermilk.
- Add the sifted dry ingredients to the creamed mixture alternately with the buttermilk, ending with the dry mixture.
- Fold in 1 cup pecans and the raisins.
- Turn the batter into 4 greased and floured 8-inch pans and bake at 350u0b0 for 35 to 40 minutes.
- Cool layers on racks and use frosting only on top of cake layers leaving sides plain.
- Sprinkle with remaining pecans.
