Piquant Cocktail Meatballs
- 2 lb. ground beef
- 1 c. cornflake crumbs
- 1/3 c. parsley flakes
- 2 eggs
- 2 Tbsp. soy sauce
- 1/4 tsp. pepper
- 1/2 tsp. garlic powder
- 1/3 c. catsup
- 2 Tbsp. instant minced onion
- 1 can jelled cranberry sauce
- 2 Tbsp. firmly packed brown sugar
- 1 Tbsp. lemon juice
- 1 (12 oz.) bottle chili sauce
- Heat oven to 350u0b0. In a large bowl, combine beef, cornflake crumbs, parsley flakes, eggs, soy sauce, pepper, garlic powder, catsup and minced onion. Blend well. Form mixture into small meatballs, about the size of walnuts.
- Arrange meatballs in a baking dish. In medium size saucepan, combine cranberry sauce, chili sauce, brown sugar and lemon juice. Cook over moderate heat, stirring occasionally, until smooth. Pour over meatballs. Bake, uncovered, 30 minutes. Makes 60.
