Tasty Turkey Breast & Gingered Leeks
- 1 turkey breast steak
- 1/2 cup apple juice
- 1 tbsp toasted sesame oil
- 2 tbsp soy sauce
- 1 small lemon, juiced
- 4 clove garlic, crushed
- 4 thyme sprigs
- 1/2 tsp dried chilli flakes
- 1 slender leek, washed and sliced 1 cm/half inch
- 1 thumb-sized piece fresh ginger, sliced very thin then cut into very thin matchsticks
- Mix marinade ingredients in a shallow dish
- Put the turkey breast steak into the marinade
- Cover with plastic wrap and refrigerate overnight
- Heat a griddle to medium high
- Pour marinade into a small pot and bring to a boil, reduce to make a syrupy sauce (about 3 tablespoons)
- Put on a steamer
- Place turkey breast steak on the griddle and cook for 3-5 minutes each side depending on size and thickness
- Steam the leeks and ginger for 5 minutes until soft
- Rest the turkey for a few minutes, then slice across the grain/diagonally
- Serve the turkey and leeks on a bed of brown rice (optional) with the sauce from the marinade spooned over the top
