Impossible Buttermilk Pie

• 1 1/2 cups sugar
• 1 cup buttermilk
• 1/2 cup biscuit baking mix (bisquick)
• 13 cup butter melted
• 1 teaspoon vanilla extract
• 3 large eggs

1. Heat oven to 350F (180C).
2. Grease pie plate.
3. Beat all ingredients until smooth, 30 seconds in the blender on high, or 1 minute with hand beater.
4. Pour into pie plate.
5. Bake until knife inserted in center comes out clean, about 30 minutes.
6. Cool 5 minutes.
7. Serve with fresh fruit, if desired.
