Bird's Quiche Recipe
- 1 (9 inch) unbaked deep dish pastry shell
- 1 (6 ounce.) can Hormel chicken
- 1 c. shredded Swiss or possibly Monterey Jack cheese
- 3/4 c. mayonnaise
- 1 teaspoon basil
- 1 (10 ounce.) pkg. minced spinach, cooked and squeezed dry
- 1/4 c. finely minced onion
- 2 Large eggs, beaten
- 3/4 c. lowfat milk
- 1/4 teaspoon pepper
- Pierce pastry shell thoroughly with a fork.
- Bake at 375 degrees 10 min.
- In a large bowl, whisk together Large eggs, lowfat milk, mayonnaise, and seasonings till smooth.
- In a separate bowl, chop well together chicken, cheese, spinach, and onion.
- Bake at 350 degrees for 45 to 50 min, till brown.
- Cold at least 30 min before cutting.
- Good with muffins, fruit, and a green salad.
